450g chicken thighs or breast, cut into bite-sized pieces

freshly ground black pepper

soy sauce

oyster sauce

dark soy sauce

cornstarch

vegetable oil

bell pepper

Instructions
Marinate chicken with 1 tbsp soy sauce, cornstarch, and half the black pepper. Let it sit 15–30 mins.
Heat oil in a wok on high heat until shimmering.
Add chicken and sear until golden brown. Remove and set aside.
In the same pan, add garlic, ginger, onions, and bell peppers. Stir-fry 2–3 minutes.
Return chicken to the wok. Add remaining sauces and black pepper.
Toss everything until well coated and heated through.
Garnish with green onions or sesame seeds if desired.
